Sourdough Starter Blondies Recipe for National Sourdough Day

I make a lot of sourdough bread and I'm always interested in different recipes to use the discard from my starter. This sourdough starter blondies recipe is a great way to use up fresh discard. The results are a tasty sweet dessert that everyone will be excited to try!

To make these moist, delicious blondies you will need butter, an egg, sourdough starter, brown sugar, vanilla extract, white wheat flour or whole-wheat flour, baking powder, salt and baking chips. Get creative with the baking chips! You can use toffee chips, butterscotch chips, chocolate chips (dark, semisweet, white or milk) or whatever kind of baking chips you like.

These easy blondies are a fun way to use sourdough starter discard. Serve them for dessert with a cup of coffee of glass of milk, or as a sweet snack just because.

  • I melted butter first before I gathered the other ingredients and sped up the cooling by placing the melted butter into the freezer for 5 to 7 minutes.
  • In baking always used unsalted butter because it's way easier to control the salt by adding it vs. it being included in the butter. If you don't have unsalted, omit the added salt in the recipe.
  • Store the blondies in an airtight container for five days or freeze for up to two months.
  • Use starter that is unfed and has been discarded in the past week for best (not too sour) results.

Here's how to make it: 

  1. In a medium-sized bowl add melted butter, egg and sourdough discard. Blend thoroughly. Add the brown sugar and vanilla and mix completely.
  2. In another bowl add flour, baking powder and salt. Stir gently with a fork.
  3. Add the flour mixture to the wet ingredients and stir to combine. Add the chips and mix with the batter.
  4. Spread the batter into a parchment paper-lined 13x9-inch baking pan.
  5. Bake in a preheated 350-degree F oven for about 30 minutes, or until the brownies are golden brown.
  6. Cool for 30 to 60 minutes, then cut and enjoy!
