Simple Cafe's Best Veggie Burgers Recipe May Make You Go Meatless

I have been wanting to make these amazing veggie burgers since I first got to try them at Simple Cafe in Lake Geneva, Wis. My friend took me there, and I loved their philosophy of cooking from ingredients that are in season. We had such wonderful fresh meals and great conversation with our kind server who told me about the farmers they source their food from and why their menu changed based on what types of food came in.

I was very excited when I asked her if I could have the recipe for the delicious veggie burger and she immediately responded, “Yes!” When I got home, I laughed when I realized the recipe was for 80 burgers! But I’ve cut the vegan and vegetarian recipe down here for you to enjoy with your family or friends tonight.

Luckily, all the ingredients you’ll need are readily available year-round in most grocery stores. Here are the wholesome, fresh ingredients you will need to make this vegetable burger: walnuts, brown rice, panko, garlic hummus, black beans, olive oil, fresh mushrooms, onion, green onions, low-sodium soy sauce and freshly ground black pepper.

Serve the burger patties on their own for lunch or for dinner with your favorite side dishes, or put them into a bun and top with your favorite burger toppings.

Recipe Notes

  • I cannot recommend Trader Joe's organic frozen rice packets enough. One frozen packet cooks in four minutes and is some of the best organic rice I’ve ever tasted, and really makes a great shortcut on this recipe!
  • I used a variety of mushrooms in my burgers.
  • Store leftovers in an airtight container in the refrigerator.

Here's how to make it: 

  1. Place a large skillet on the stove on medium and add your walnuts. Roast the nuts until they are slightly more brown and fragrant, about 3 to 4 minutes, stirring often. Place the walnuts in a medium mixing bowl and set aside.
  2. In the same large skillet on medium, place your olive oil and onions. Sauté for 4 to 5 minutes. Add your mushrooms and cook until the mixture is soft, about 4 to 5 additional minutes. Keep the pan for cooking the patties.
  3. While the mushrooms and onions cook, place the rest of the ingredients in the bowl with the toasted walnuts.
  4. Add the mushroom mixture when it finishes cooking. Blend all the ingredients together with a spoon or your clean hands.
  5. Preheat the same skillet over medium heat. Form the patties from the mixture into the size desired and place into the pan. Cook for 3 to 4 minutes per side.
  6. Serve as is or topped with your favorite burger toppings inside a bun and enjoy!
