Ingredients
- 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 3/4 cup Peanut Sauce
- chopped unsalted roasted peanuts
Peanut Sauce
- 1/2 cup creamy peanut butter
- 3 tablespoons sweet red chili sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1/8 - 1/4 cup hot water (optional)
Here's how to make it:
- To make the peanut sauce, put the peanut butter, red chili sauce, apple cider vinegar, soy sauce and honey into a bowl. Whisk to blend. Thin with hot water to desired consistency – less water for a thicker dip, more water for a thinner dressing.
- To make the chicken, add oil to a skillet over medium-high heat. Add the chicken to the pan and pour the soy sauce over the top.
- Cook for about 10-12 minutes, or until chicken is fully cooked.
- Stir in 3/4 cup of the prepared peanut sauce. Cook until warmed through. Garnish with chopped unsalted roasted peanuts, if desired.
