Who doesn't love Panda Express? I know my husband and boys love the Asian fast food restaurant. If you're looking for a Panda Express copycat recipe of their sweet fire chicken, you can stop googling. This easy sweet and spicy Asian stir fry chicken recipe takes about 25 minutes to throw together.
You don't need a long list of ingredients to make this copycat recipe either. Here is your short shopping list for this high-protein dinner: boneless chicken breasts, cornstarch or flour, eggs, vegetable oil for frying, red bell pepper, pineapple chunks, green onions , sweet chili sauce and optional sriracha sauce to kick things up a notch.

Ingredients
- 1 pound boneless chicken breasts, cut into 1-inch pieces
- flour or cornstarch (you can use gluten-free flour)
- 2 eggs, beaten
- vegetable oil, for frying
- 1 red bell pepper, chopped
- 1 1/2 cups pineapple chunks
- 3 - 4 green onions, sliced
- 1 cup sweet chili sauce (on the Asian food aisle)
- sriracha (optional)
Here's how to make it:
- Dredge the chicken chunks in the flour or cornstarch, then into the beaten eggs, then back into the flour or cornstarch. Cook in hot oil until golden and crispy. Drain chicken on paper towels and set aside. Pour out excess oil in pan. (For a gluten-free dinner, use gluten-free flour.)
- To the same pan, add the red bell pepper, pineapple chunks and green onion. Cook, stirring, about 3 minutes.
- Add the chicken back to the pan along with the sweet chili sauce and optional squirt or two (or three!) of sriracha. Heat through. Serve over rice, if desired. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
