Peach & Cucumber Salad Recipe With Gochujang Vinaigrette Is Farm-to-Fork Fresh by Jan Mostrom

Summer salads are truly my favorite. This peach and cucumber salad recipe with gochujang vinaigrette is such a wonderful sweet and spicy surprise. The spice of the gochujang combines beautifully with the sweetness of the peaches and the creaminess of the mozzarella.
To make this farm-to-table recipe you will need gochujang, rice vinegar, olive oil, maple syrup, fresh garlic, salt, black pepper, fresh peaches, seedless cucumbers, fresh mozzarella and fresh basil. Lots of fresh, gluten-free ingredients!
This cucumber salad recipe is also so versatile because you can swap any summer fruit for the peaches if you don’t have them (think plums, nectarines or apricots). And if you want a slightly heartier salad, you can add spinach or arugula as well. And don't forget about the health benefits of peaches and the health benefits of cucumbers!
Serve this vegetable and fruit salad as a side dish with dinner or as a light summer lunch. It would also be delicious as an appetizer.

Ingredients
Gochujang Vinaigrette
- 2 tablespoons gochujang
- 2 tablespoons rice vinegar
- 1/4 cup extra virgin olive oil, plus more for serving
- 2 teaspoons maple syrup
- 1 garlic clove, finely grated or minced
- salt and black pepper
Salad
- 4 ripe peaches, pitted and sliced
- 4 Persian or 1 English cucumber, sliced
- 8 ounces fresh mozzarella, cut into bite-size pieces
- big handful basil leaves, julienned
Recipe Notes
- Don't have peaches? Use nectarines, apricots or plums.
- If you use a regular garden cucumber, remove the seeds.
- You can add other fresh herbs to this wholesome salad.
Here's how to make it:
- Place the vinaigrette ingredients in a jar or bowl and whisk or shake to combine well. Taste to adjust salt and black pepper.
- Place the cucumbers and peaches on a large plate or platter.
- Put the mozzarella on top and drizzle the vinaigrette on top, reserving some for later, and sprinkle the basil on top. Taste to see if more dressing is needed, Serve and enjoy!
