I seem to be obsessed with all things fall and pumpkin spice right now, so this simple pumpkin cookies recipe with almond flour is the perfect bite. Instead of granulated sugar, this recipe uses mashed banana (check out the health benefits of bananas) and maple syrup to sweeten the cookies. And this festive pumpkin spice cookie recipe couldn't be any easier to make. With just eight ingredients and in about half an hour, you can whip up some weekend baking therapy that will have everyone "falling" in love.
To make this gluten-free cookie recipe, you'll need to gather these eight wholesome ingredients: pumpkin puree, mashed banana, maple syrup, vanilla extract, almond flour, pumpkin pie spice, baking powder and salt. The chocolate chips and chopped pecans are optional. You mix up the low-sugar dough then bake the comforting cookies for about 15 minutes. Simple and irresistible!

Ingredients
- 1/2 cup pumpkin puree (not pumpkin pie filling)
- 1/2 cup overripe bananas, mashed (about 1 1/2 medium bananas)
- 2 tablespoons real maple syrup
- 2 teaspoons vanilla extract
- 1 1/2 cups fine almond flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Optional Ingredients
- 3/4 cup semisweet chocolate chips (or your favorite chocolate chips)
- 3/4 cup chopped pecans (or walnuts)
Here's how to make it:
- In a large mixing bowl, add the pumpkin, mashed bananas, maple syrup and vanilla. Stir to combine.
- Add the almond flour, pumpkin pie spice, baking powder and salt. Stir to combine.
- Fold in the chocolate chips and pecans, if using. (We prefer semisweet or dark chocolate chips. You also could use walnuts instead of pecans.)
- Drop by tablespoons-full onto parchment paper-lined baking sheets and flatten/shape a bit. These cookies stay about the same size/shape as how they're formed. (The number of cookies depends on the size of cookies you form. I made 16 cookies.)
- Bake in a preheated 350-degree F oven until cooked through and golden, about 15 minutes.
- Allow to cool before serving.
- Store leftover cookies in an airtight container in the refrigerator or freezer. Reheat in the microwave or oven.
