It doesn't have to be autumn to enjoy pumpkin, but fall is definitely the ideal season to get creative with it. I've been making recipes using pumpkin because it's such a fun way to celebrate the season. This creamy high-protein, high-fiber pumpkin spice oatmeal recipe is our fall fave!
We enjoy starting our day with a healthy dose of fiber and protein for breakfast and, because pumpkin is a good source of fiber, this pumpkin oatmeal recipe is a tasty way to do that. When you combine oatmeal and pumpkin, you get the health benefits of oats, the health benefits of pumpkin and the health benefits of protein in one festive meal.
To make this gluten-free oatmeal recipe, you'll need these five nourishing ingredients: rolled oats, pumpkin puree, maple syrup, vanilla extract and pumpkin pie spice. The chopped pecans and other garnishes are optional. You simply cook the oatmeal with water and the other ingredients. You can add chopped pecans and garnish with plain Greek yogurt, berries, sliced bananas or other fruit of choice.

Ingredients
- 1 1/2 cups rolled oats
- 1 3/4 cups water (or milk of choice)
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1/4 cup pure maple syrup (or to taste)
- 1 1/2 teaspoons vanilla extract
- 1 1/2 teaspoons pumpkin pie spice (or to taste)
- 1/3 teaspoon salt (optional)
- chopped pecans, walnuts, berries, bananas, etc. (optional garnishes)
Here's how to make it:
- In a medium saucepot over medium heat, add the water and the oats. Bring to a simmer. (Oats are naturally gluten-free, but to be sure, use gluten-free oats.)
- Add the pumpkin, maple syrup, vanilla, pumpkin pie spice and salt, if using. Stir to combine. Cook until oatmeal is done to your liking (we like it softened but not mushy), about 3 minutes. Taste and add more maple syrup or pumpkin spice, if needed.
- Serve immediately. Garnish with chopped pecans, plain Greek yogurt or other toppings of choice, if desired.
- Store leftover oatmeal in an airtight container in the refrigerator and reheat in the microwave with a splash of milk.
