2-Ingredient Almond Maple Cookies Recipe (Need I Say More?)

Sometimes I just want a little something for a snack that hits the spot and is healthy (or healthier). This two-ingredient almond maple cookie recipe is the answer to that want. The cookies are perfect and so easy to make. The sweet maple-flavored cookies are ready in five minutes to pop into the oven. The sweet cookies come out warm, chewy and ready to be paired with a cup of tea or coffee or a glass of cold milk.

And yes you read right. There are only two ingredients in these almond maple cookies. Here is what you'll need to grab from the pantry: almond flour and maple syrup. Nothing more, nothing less. Mix the two ingredients together and bake until golden.

Serve these low-sodium and gluten-free cookies are as a quick sweet snack, with afternoon tea or coffee, or for dessert with some ice cream on the side. Why not? You could even crumble the cookies over the ice cream. Genius.

  • You can substitute honey or agave nectar for the maple syrup.
  • Store in an airtight container for five to seven days (but I don't think they will last that long).
  • This recipe can easily be doubled.

Here's how to make it: 

  1. Using a fork or small spatula, combine the two ingredients in a mixing bowl.
  2. Spoon batter into six cookies on a parchment paper-lined baking sheet. Use damp hands to form into balls and gently press them flat. The flatter the cookie, the crisper they will be. (You might want to make some a little thicker if you'd like more chewy cookies.)
  3. Bake in a preheated 350-degree F oven for 10 to 12 minutes, or until the cookie edges are golden and brown.
  4. Remove and cool on a wire rack. The longer you cool, the more crispy they will become.
  5. Enjoy with your favorite beverage or a bit of ice cream!
