Sweet, Tart & Tangy Cranberry Brie Bites Appetizer Recipe Elevates Game Day by Jan Mostrom
We had such a fun time making these delicious bites of brie and cranberry. We made the Amish Christmas Jam the day before in the slow cooker and then put these together easily the next day. This mini cranberry brie appetizer recipe is so simple to make! They are the perfect small bites to pass around at family get-togethers or to watch the big game. Who says you can only serve chips and dips while cheering on your team?
To make these sweet, tart, low-sodium appetizer bites you will need only four ingredients. Here is your shopping list: a pie crust, cranberry sauce (or make homemade Amish Christmas Jam), brie cheese and fresh chives, for garnishing (optional, but pretty and adds freshness).
Serve these cheesy, fruity appetizers as a snack, before dinner, when you're entertaining or anytime you want something sweet, tart, tangy and creamy.

Ingredients
- 1 (8 ounce) prepared pie crust (1/2 of a 14-ounce package)
- 1/2 cup Amish Christmas Jam or cranberry sauce (divided)
- 4 ounces brie cheese, cut into 24 pieces
- 1 tablespoon chopped fresh chives (optional)

Recipe Notes
- Don’t put too much sauce or it will overwhelm your bites and the brie taste will be lost.
- Make sure to roll your pie crust thin. I got exactly 24 circles after I picked up the scraps of dough and re-rolled it twice.
- You could use smooth or whole-berry cranberry sauce. Canned would work fine, but if you have time make homemade cranberry sauce. It's so easy!
Here's how to make it:
- On a clean counter sprinkle a little bit of flour and place the crust on it. Roll it out so that is is about 12 inches in diameter. Cut 2-inch circles out of the dough with a biscuit cutter or glass. You should make 24. Re-roll the pieces of dough again if you need to make more circles.
- Place the crust into muffin tins that have been sprayed with nonstick cooking spray, pressing the dough into the pan. Prick some holes in the dough with a fork.
- Bake in a preheated 450-degree F oven for about 4 to 6 minutes, or until just browned. Take the crusts out of the oven.
- Add a dollop of jam or cranberry sauce into each crust.
- Top with a thick piece of brie.
- Place the muffin tin back into the oven until the brie melts, about 4 minutes.
- Remove from oven and serve warm with a sprinkle of chives, if desired.
