Sometimes you want a doughnut. Sometimes you want a muffin. What to do? Combine them into one! This cinnamon-sugar muffin tin doughnut recipe really hits the spot for breakfast, brunch or as a sweet snack.
To make these moist, cinnamon-coated muffin doughnuts you will need all-purpose flour, granulated sugar, cornstarch, baking powder, salt, ground nutmeg, ground cinnamon, buttermilk, eggs and butter. The baked muffins are completely rolled in butter and cinnamon-sugar while still warm from the oven. Oh, my.
Serve these easy muffin donuts for breakfast or brunch, or keep them on the counter for a quick snack. You can change up the flavors of these doughnut muffins, too (see Recipe Notes). Now get to baking!

Muffins
- 2 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1 cup buttermilk
- 1 stick (8 tablespoons) butter, melted
- 2 whole eggs
- 1 egg yolk

- 1 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1 stick (8 tablespoons) butter, melted

Recipe Notes
- Instead of rolling the warm donut muffins in cinnamon-sugar, try apple pie spice, pumpkin pie spice, gingerbread spice, chai sugar or your favorite baking spices.
- Store the muffins in an airtight container to keep them fresh.
Here's how to make it:
- In a mixing bowl, whisk together the flour, sugar, cornstarch, baking powder, salt, nutmeg and cinnamon.
- In another bowl, stir together the buttermilk, melted butter, whole eggs and egg yolk.
- Add the wet ingredients to the dry ingredients. Stir until just combined.
- Divide the batter into 12 muffin cups that have been sprayed with nonstick cooking spray.
- Bake in a preheated 400-degree F oven for about 20 minutes, or until a toothpick comes out clean. Remove from the oven and cool for 5 minutes.
- While the muffins cool, stir together the sugar and cinnamon. Melt the remaining stick of butter in a shallow bowl. Dip each muffin into the melted butter and then roll to completely cover in the cinnamon-sugar.
