Easy Frosted Pumpkin Bars Recipe: The Sweetest Fall Dessert Ever by Jan Mostrom
We recently had a beautiful wedding shower for my niece at my house. The one thing she asked to be on the menu was her favorite dessert – these delicious fall pumpkin squares. These moist pumpkin squares remind me a bit of my mom's spice cake, but are so much better. The pumpkin dessert is moist and makes the house smell so good. These pumpkins bars are so yummy you might just want to make a double batch to make sure you don’t run out of them too quickly!
Here is what you will need to make these frosted fall pumpkin squares: ground cinnamon, sugar, baking soda, flour, salt, pumpkin puree, vanilla extract, neutral oil and an egg. For the frosting you'll need powdered sugar, butter, cream cheese and vanilla.

Ingredients
Bars
- 2 teaspoons cinnamon
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 2 cups flour
- 1 teaspoon salt
- 2 cups canned pumpkin puree
- 1 teaspoon vanilla
- 1 cup neutral cooking oil
- 4 eggs
Frosting
- 2 - 2 3/4 cups powdered sugar (more or less depending on sweetness desired)
- 1 stick (1/2 cup) unsalted butter, softened
- 8 ounces cream cheese, softened
- 2 teaspoons vanilla

Recipe Notes
- If you use a 13x9-inch cake pan the bars will be thicker and more cake-like.
- Refrigerate any leftover bars in an airtight container for up to three to four days.
Here's how to make it:
- Grease and flour a jelly pan or a 13x9-inch cake pan. In a large mixing bowl combine all the bar ingredients and blend together until smooth. Spread into the prepared pan.
- Bake in a preheated 350-degree F oven for 20 to 30 minutes (the timing will be shorter for a jelly roll pan and a bit longer for a cake pan). Do not overbake!
- When the bars are cooked remove them from the oven and let cool on a rack for 15 to 30 minutes.
- After cooling place a rack or large platter over the pan and flip it over onto the plan to completely cool.
- While the bars coo, make the frosting. In a medium-sized bowl combine 2 cups powdered sugar and the rest of the frosting ingredients. Mix until smooth. Taste and add more powdered sugar, if needed. When the bars are completely cool frost.
