  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup uncooked farro
  • 1/4 cup extra virgin olive oil
  • 1/2 large onion, thinly sliced
  • 3 medium sweet peppers (red, green, orange and/or yellow), thinly sliced
  • 1 small hot pepper (Cherry Bomb, fresno or jalapeño), thinly sliced
  • 4 garlic cloves, minced
  • 2 tablespoons capers, drained and chopped
  • 3 tablespoons red wine vinegar
  • 1/2 cup chopped fresh basil leaves
  • 1/3 cup chopped fresh parsley leaves
  • 2 tablespoons good balsamic vinegar, for serving

  • You can use yellow or white onion in this recipe.
  • Use whatever color peppers you like!

Here's how to make it: 

  1. Cook farro according to directions and set aside. Put a large pot on the stove on medium heat and add the olive oil. Add in all the sliced peppers, the onion and a few pinches of salt and sauté for about 10 minutes, or until they are all soft.
  2. Add in the garlic and capers and cook for another 3 minutes. Remove from heat and add red wine vinegar and taste to see if more salt is needed.
  3. Place pan back on stove on medium-low heat and add in the cooked farro and chickpeas. Mix well. 
  4. Add in basil and parsley and some freshly ground pepper.
