This amazingly simple feta egg recipe went viral on TikTok. I think it went viral because it's just so easy and versatile! This basic version of the breakfast recipe is just placed on top of toast or avocado toast. I put it over my homemade sourdough, but it would be wonderful over any toasted bread.
You don't need many ingredients at all to make this egg recipe for breakfast, brunch or even as a snack. Here is your short shopping list for this high-protein recipe: eggs, feta and bread. If you want to add butter to your toast and top the feta egg with avocado and tomato slices, add those ingredients to the list, too. The egg and feta cook up in no time in a skillet. So delicious! Crispy feta eggs make a wonderful high-protein breakfast. You could even toast two slices of bread and make a feta egg sandwich. Now why didn't I think of that?

Ingredients
- 1 egg
- 1/4 cup crumbed feta
- 1 slice of bread, toasted
Optional Ingredients
- avocado
- tomato
- seasoning of choice
Here's how to make it:
- Heat a frying pan on medium heat and grease with cooking oil. Sprinkle feta around the pan in a circle and warm for about 1 to 2 minutes. Crack an egg into the center of the cheese, sprinkle with black pepper and fry for a few minutes. (For best results, use a nonstick skillet. I don't add salt because of the saltiness of the feta.)
- Cover the egg.
- Cook for the last minute until the edges are crispy.
- While egg is cooking toast your bread and, if desired, slice avocado and tomato. Butter toast, if desired, and add avocado, a bit of seasoning and then the egg and feta. Serve immediately. (Toast two slices of bread and make a breakfast egg sandwich.)
