Catalan-Inspired Greens Recipe: Get Sweet On This Healthy Side Dish by Jan Mostrom
Sometimes I crave greens and this recipe is such a nice way to get them in. This Catalan-inspired greens recipe is tasty and easy to make. But don’t be shy with the greens, there are a lot of them! Don't worry, the leafy greens wilt and make room for the next batch. The addition of the apple and raisins balance the greens with a lovely sweetness that will bring you back to this vegetable side dish recipe again and again!
Here is your shopping list for this healthy greens recipe: olive oil, onion, an apple, garlic, crushed red pepper flakes, raisins, pine nuts, sherry or white wine, your greens of choice, granulated sugar and nutmeg. Ingredients
- 2 tablespoons olive oil
- 1 cup onion, diced
- 1/2 of an apple, diced
- 6 garlic cloves
- 1/2 teaspoon crushed red pepper flakes
- 1/4 cup raisins (golden or regular) currants or dried cranberries
- 1/4 cup toasted pine nuts or slivered almonds
- 1/4 cup sherry or white wine (or substitute broth)
- 6 cups packed spinach, chopped (or use any green like swiss chard, beet tops, kale, etc., or a mix)
- pinch of granulated sugar (optional)
- pinch of nutmeg

- Any green leafy vegetable will work in this recipe. Think spinach, swiss chard, turnip greens, mustard greens, collard greens, kale, beet tops.
Here's how to make it:
- Heat oil in a large sauté pan over medium-high heat. Add onion and apple and stir until soft, about 3 to 4 minutes. Turn heat down to medium. Add the crushed red pepper flakes and garlic. Cook, stirring, a couple more minutes.
- Add the raisins, pine nuts and wine, and cook until the liquid is mostly gone.
- Add as many greens as will fit in your pan. Season with salt and pepper. Stir until wilted. Continue adding greens in batches until they are gone.
- Add nutmeg and and more crushed red pepper flakes, if desired. Taste and add sugar and more salt and pepper, if needed.
