Catalan-Inspired Greens Recipe: Get Sweet On This Healthy Side Dish

Sometimes I crave greens and this recipe is such a nice way to get them in. This Catalan-inspired greens recipe is tasty and easy to make. But don’t be shy with the greens, there are a lot of them! Don't worry, the leafy greens wilt and make room for the next batch. The addition of the apple and raisins balance the greens with a lovely sweetness that will bring you back to this vegetable side dish recipe again and again!

Here is your shopping list for this healthy greens recipe: olive oil, onion, an apple, garlic, crushed red pepper flakes, raisins, pine nuts, sherry or white wine, your greens of choice, granulated sugar and nutmeg. The ingredients cook up quickly in a skillet on the stovetop. They smell heavenly as they cook with all the different aromatic ingredients.

Serve this skillet greens recipe as a side dish with chicken, pasta, tofu, beef, pork, seafood, lamb or your favorite protein. Or enjoy them as a vegetarian main dish.

  • Any green leafy vegetable will work in this recipe. Think spinach, swiss chard, turnip greens, mustard greens, collard greens, kale, beet tops.

Here's how to make it: 

  1. Heat oil in a large sauté pan over medium-high heat. Add onion and apple and stir until soft, about 3 to 4 minutes. Turn heat down to medium. Add the crushed red pepper flakes and garlic. Cook, stirring, a couple more minutes.
  2. Add the raisins, pine nuts and wine, and cook until the liquid is mostly gone.
  3. Add as many greens as will fit in your pan. Season with salt and pepper. Stir until wilted. Continue adding greens in batches until they are gone.
  4. Add nutmeg and and more crushed red pepper flakes, if desired. Taste and add sugar and more salt and pepper, if needed.
