Easy Mediterranean Creamed Spinach Recipe Is Loaded With Lemon, Garlic & Feta Cheese

I enjoy the Mediterranean diet. Maybe it’s because my dad is from Croatia and I grew up eating my grandmother’s Old World Mediterranean cooking. Or maybe it’s because Mediterranean ingredients and cooking styles provide so many health benefits. Or maybe because Mediterranean flavors are simply delicious!

Whatever the reason, I find myself constantly drawn to Mediterranean recipes, and I love to create my own versions. Take this creamed spinach recipe, for example. This easy creamed spinach recipe is loaded with nutritious ingredients like fresh spinach, olive oil and garlic along with the creamy, delicious flavor of feta cheese.

This simple vegetarian recipe makes a perfect side dish for a wide variety of dinners during the week, or even for holidays or special occasions (I recently served it as an Easter side dish accompanying our lamb dinner). You could even use it as a topping over pasta or rice, or as a spread on crusty bread. So easy and delicious!

Servings: 4 to 6

Ingredients

  • 3 tablespoons olive oil
  • juice of 1 medium lemon
  • 2 teaspoons minced garlic
  • 1/2 teaspoon Mediterranean seasoning (or 1/4 teaspoon oregano and 1/4 teaspoon onion powder)
  • 16 ounces fresh baby spinach
  • 1 tablespoon cream cheese
  • 4 ounces feta cheese crumbles

Here's how to make it:

  1. In a small bowl, combine the olive oil, lemon juice, garlic and seasoning. Pour the mixture into a large skillet and warm on medium heat.
  2. Add the cream cheese and stir until blended.
  3. Add the feta cheese and stir until blended.
  4. Add the spinach and stir to combine. Continue stirring until spinach is wilted and everything is melted and creamy delicious.
