Air Fryer Mayo Barbecue Chicken Recipe: Another Winner Chicken Dinner

I'm slowing getting to know my air fryer. So far the popular kitchen appliance has turned great carrots, turnips, beef ribs, turkey thighs, tortilla chips, tacos, turkey thighs, pizza and more. I've also discovered how cooking with mayonnaise can add not only moistness to meats like chicken, but crispness to dishes like magic mayonnaise roasted potatoes.

My latest recipe that includes mayonnaise is this air fryer mayo barbecue chicken recipe. The chicken is coated in a creamy marinade made with mayonnaise, barbecue sauce, mustard, garlic powder, onion powder, smoked paprika and ground cumin. The chicken is then cooked in an air fryer until cooked to the bone, moist, tender and sticky on the outside. Delish.

Serve this air fryer chicken recipe for dinner with your favorite side dishes. Pasta salad, cole slaw, baked beans or a fresh vegetable complement the chicken nicely.

  • Cover the air fryer tray with aluminum foil for easy cleanup.

Here's' how to make it: 

  1. Put the mayonnaise, barbecue sauce, mustard, garlic powder, smoked paprika, onion powder and ground cumin in a plastic zipper bag or shallow baking dish. Season with salt and pepper. Add the chicken and squish to coat the chicken completely. Marinate in the refrigerator for 30 minutes or up to overnight.
  2. Put the legs in a single layer in an air fryer basket or on the air fryer tray.
  3. Bake in a preheated 400-degree F air fryer for 20 to 25 minutes, or until cooked through (internal temperature should be 165 degrees F).

Just made it and omg it was tender and juicy. Only thing is I did not have enough Mayo so I added ranch dressing to make up for and I think it made it better. I am going to try it next on chicken thighs.
