Ready for another fantastic roasted potato recipe? My mayonnaise potatoes recipe has taken on a life of its own. Am I surprised at the popularity of this roasted potato recipe? Not really, because it is a delicious side dish that's crispy on the outside and creamy on the inside. So when my husband requested the potatoes again – in the same week – I decided I had to make them just a little different. Enter the magic mayonnaise Tuscan roasted potatoes with Parmesan cheese.
This quick and easy potato recipe is made with Yukon gold potatoes (you could use red or white potatoes), mayonnaise, garlic powder, onion powder, Tuscan seasoning and grated Parmesan cheese. The potatoes are coated in the seasoned mayonnaise and then baked until golden, crispy and tender. Right before the potatoes are done baking, sprinkle on the grated Parmesan cheese and let it melt. Serve these mayonnaise potatoes as a side dish with chicken, meatloaf, steak and gravy, smothered chicken, pork chops or your favorite dinner. They will add a touch of comfort (food) to whatever you're serving.

Ingredients
- 1 pound small Yukon gold, red or white potatoes, cut in half (I used Yukon gold)
- 1/4 cup mayonnaise
- 1/2 tablespoon garlic powder
- 1/2 tablespoon onion powder
- 1 teaspoon Tuscan seasoning (I used S.A.L.T. Sisters Tuscan Farmhouse Blend)
- 1/4 cup grated Parmesan cheese
Here's how to make it:
- Put the mayonnaise, garlic powder, onion powder and Tuscan seasoning in large bowl. Stir well to combine. (If you don't have Tuscan seasoning, you could use dried Italian seasoning.)
- Add the potatoes and stir to coat. Season with black pepper, to taste, if desired. (My Tuscan seasoning has salt in it, so I didn't add additional salt. If your brand does not, add a little salt, too.)
- Pour the potatoes into a baking dish or onto a baking sheet. Bake in a preheated 375-degree F oven for about 30 minutes or until tender and crispy. About 5 minutes before the potatoes are done, sprinkle with the Parmesan cheese. Store any leftover potatoes in an airtight container in the fridge. Reheat as desired.
