Zesty Barbecue Chicken Recipe Will Make Your Mouth Water by Chef Dan Giusti

Barbecue chicken is one of those dinners the whole family enjoys. This easy barbecue chicken recipe is not only super simple and kid-approved, it's also full of zesty flavor that will make your mouth water. Plus, it's made (apart from the chicken) with mostly pantry staple ingredients, making it easy to pull together.

BBQ Chicken
Ingredients
- 4 - 5 pounds bone-in chicken legs or thighs
- 2 tablespoons canola oil
- Deli Spice (recipe below)
- BBQ Sauce (recipe below)
Here's how to make it:
- Put the chicken into a bowl. Add the oil and Deli Spice and massage into the chicken. If you don't want to get your fingers dirty, an alternative, oil-free method is to add the spice into a large plastic bag, then seal it, leaving an air bubble, and shake the seasoning into the chicken. Allow chicken to marinate in the fridge overnight to soak up the spices.
- When ready to cook, line a sheet try with parchment paper and a wire rack. Spray the rack with nonstick cooking spray. Place the chicken skin side up on the rack, tucking excess skin underneath. Roast in a 400-degree F oven for 30-40 minutes, or until a thermometer reaches 165 degrees F and juices run clear. Let the chicken cool.
- Place the BBQ sauce in a bowl. Dip each thigh into the sauce and coat. Shake off excess sauce. Place the chicken back onto the rack skin side up and roast for 10 more minutes, allowing sauce to caramelize. Serve.
Deli Spice
Ingredients
- 2 tablespoons kosher salt
- 3 tablespoons paprika
- 1/2 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder

BBQ Sauce
Ingredients
- 1 1/2 cups ketchup
- 1/2 cup light brown sugar
- 1/2 cup apple cider vinegar
- 1/2 cup molasses
- 2 tablespoons Dijon mustard
- 1 tablespoon water
