Dan Giusti, former Executive Chef of Noma in Copenhagen - perennially called the best restaurant in the world - with a story idea left his post as head chef at Noma after three tremendous years, to expand his reach and bring his expertise to tackle another challenge: school food. So, he left to launch Brigaid, a for-profit organization that recruits professionally trained chefs to lead a single school kitchen full-time. Today, Brigaid partners with New London Public Schools in New London, Connecticut, New York City Public Schools, Richmond Public Schools in Richmond, Virginia, the Southampton Union Free School District in Southampton, New York, and Encore Community Services in New York, New York.
