Wake up that Meatless Monday! This easy buffalo cauliflower recipe makes a flavorful snack, meatless taco filling, fiery side dish or vegetarian lunch or dinner. There's so much flavor packed into these little snack bites, your mouth won't know what hit it.

To make these tasty buffalo cauliflower bites you will need just five simple ingredients. Here is your short and sweet shopping list: cauliflower, olive oil, garlic powder, chili powder and buffalo sauce. The ingredients are mixed together, poured on to a baking sheet and baked until tender and crisp. Delish.

  •  If you're vegan, be sure to check the ingredients in the buffalo sauce, as some contain butter. 

Here's how to make it:

  1. Cut the cauliflower into small florets and put into a bowl.
  2. Add the garlic powder, chili powder, olive oil and buffalo sauce. Mix well. Season with black pepper.
  3. Pour onto a baking sheet and spread so it's in one layer. Bake in a preheated 425-degree F oven for about 30 minutes, stirring halfway through.
