Ingredients
- 1 large head cauliflower, chopped into florets
- 3 tablespoons olive oil
- 2 teaspoons paprika
- 5 large cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 lemon, juiced
- 2 tablespoons chopped fresh parsley (optional)
Here's how to make it:
- Line a large baking sheet with parchment paper and preheat the oven to 425 degrees F. Place the cauliflower florets onto the parchment and drizzle with olive oil. Toss to coat. Add the spices and toss again.
- Bake for 30 minutes. Remove from the oven and sprinkle with the minced garlic and Parmesan. Toss to coat and return to the oven to bake for another 5 to 10 minutes.
- Squeeze the lemon juice on the cauliflower and sprinkle with parsley, if desired, Serve with your favorite protein. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
