Mediterranean Zucchini & Feta Salad Recipe Is Healthy Done Fast

I made this zucchini salad the other night when we had friends over for dinner. They loved the smoky sesame oil and feta on the zucchini! This easy Mediterranean-inspired salad recipe is a fresh way to serve a budget-friendly vegetable side dish.

This vegetable salad recipe is so easy to make and is on the table in about 15 minutes. To make this healthy gluten-free Mediterranean zucchini salad recipe you will need zucchini, red wine vinegar or sherry vinegar, honey, salt, olive oil, sesame seeds, dried mint or oregano, crushed red pepper flakes and feta cheese.

  • You can serve the salad at room temperature for up to two hours after making or place in the fridge for up to two days.
  • Turn this into a grain salad by adding cooked quinoa, farro or your favorite grain.

Here's how to make it: 

  1. Place zucchini, vinegar, honey and a big pinch of salt together in a large serving bowl. Mix well.
  2. Heat a skillet over medium heat. Add the olive oil and sesame seeds. Stir while the seeds and oil toast and become aromatic, about 4 to 6 minutes. Turn off the heat. Stir in mint or oregano, crushed red pepper flakes and a bit of salt.
  3. Pour mixture over the zucchini and toss well.
  4. Break the feta into larger crumbles and place on top of the zucchini and toss gently. Serve immediately at room temperature or cover and chill in the fridge.
