Broccoli lovers, this skillet dinner is for you. If you love broccoli as much as I do, you probably already know that, in addition to its great taste, broccoli is loaded with vitamins, minerals, fiber and other bioactive compounds (check out all the health benefits of broccoli). All that goodness is wrapped into this delicious broccoli skillet casserole. This cheesy high-protein broccoli skillet casserole recipe is pure vegetarian comfort food!
This easy one-pan dinner recipe combines nutritious broccoli with high-protein and high-fiber cannellini beans (also known as white beans). Cannellini beans are a nutritional powerhouse, packed with fiber, protein and micronutrients. Rich and creamy white beans are a satisfying meat substitute that can be enjoyed for Meatless Mondays and any day (and any meal) of the week.
This cheesy skillet casserole recipe also includes healthy tomatoes (check out the health benefits of tomatoes). Plus, the wholesome skillet casserole is full of protein, thanks to the white beans, cottage cheese and mozzarella cheese (I used fresh mozzarella and got a mouth-watering cheese pull, but shredded mozzarella works, too!). Here's the gluten-free list of ingredients you'll need to make this savory skillet dinner recipe: extra virgin olive oil, fresh broccoli, cannellini beans, diced tomatoes, cottage cheese, garlic powder, mozzarella cheese and dried oregano. The fresh parsley garnish is optional. All you do is combine everything in the skillet on the stovetop then bake it until it's a sizzling golden brown. Simple and satisfying!
I served this nourishing high-fiber meal for dinner over rice, but it would be equally delicious with other grains, your favorite pasta or all by itself. Vegetarian comfort food at its simplest!

Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 2 cups broccoli, chopped
- 30 ounces (2 cans) cannellini beans, drained
- 15 ounces (1 can) diced tomatoes, drained
- 1 cup cottage cheese
- 1/2 teaspoon garlic powder
- 16 ounces fresh mozzarella, sliced (or shredded mozzarella)
- 1 teaspoon dried oregano
- salt and black pepper, to taste (optional, but I used about a 1/2 teaspoon of each)
- fresh parsley or other herb, for garnish (optional)
Here's how to make it:
- In a cast iron skillet over medium heat, add the olive oil and broccoli. Stir to combine and sauté until crisp-tender, about 3 minutes.
- Add the cannellini beans and diced tomatoes. Stir to combine then remove from heat.
- Add the cottage cheese and garlic powder. Season with salt and pepper, to taste, if desired. Stir until combined, well blended and smooth on top.
- Top with the mozzarella cheese. Sprinkle the dried oregano on top of the cheese.
- Bake in an oven that's been preheated to 425 degrees F until cooked through and a bubbly golden brown, about 15 to 20 minutes (ovens vary).
- Allow to cool a bit before serving. Garnish with parsley or other favorite fresh herb, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
