All you have to do is place everything in the slow cooker and in a few hours you have a delicious tender chicken dinner to serve up to your family with no stress, Leftovers are easily stored and reheated, so if you double your recipe you can have great lunches during the week, too.
To make this high-protein recipe you only need a short list of gluten-free ingredients. Here is your shopping list for this slow-cooker recipe: boneless/skinless chicken thighs, an onion, dried thyme, dried rosemary, dried oregano, garlic powder, onion powder, ground paprika, salt, black pepper, chicken broth, a lemon (check out the health benefits of lemon), butter and optional crushed red pepper flakes. Ingredients
- 1 3/4 pounds boneless/skinless chicken thighs
- 1 large onion, sliced into wedges
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon kosher salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1/2 teaspoon paprika
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup chicken broth or water
- 1 lemon, sliced
- 3 tablespoon butter, sliced into 4 pieces
Here's how to make it:
- Place the onions, chicken and spices in a slow cooker. (You can substitute 1 tablespoon dried Italian seasoning for the oregano, rosemary and thyme.)
- Add chicken broth or water. Stir to mix up the broth and spices. Add butter slices on top of the chicken.
- Add the lemon slices.
- Cook on high for 3 hours or low for 4 to 5, or until the chicken is cooked through. (Chicken is done at 165 degrees F internal temperature on a food thermometer. All slow cookers are different so adjust time accordingly.)
- Serve the chicken over rice or noodles, if desired, and drizzled with the butter sauce. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
