This gnocchi with caramelized onions and gruyere is the epitome of what I call comfort food. The warm gnocchi topped with the sweet caramelized onions and melted cheese is so filling and delicious – and easy to make! No need to make your own gnocchi, because who has the time? Just grab some frozen or packaged gnocchi and put this delicious pasta dinner together in 30 minutes!
To make this gnocchi recipe you will need yellow onions, fresh thyme, olive oil, potato gnocchi, butter, kosher salt, black pepper, gruyere cheese, dry white wine and either balsamic vinegar or sherry vinegar. The recipe starts on the stovetop and finishes up under the broiler. So quick and easy!
I served this Italian recipe for dinner with a side dish of blanched broccoli. It was a wonderful comfort food meal that everyone enjoy.

Ingredients
- 2 pounds yellow onions, thinly sliced
- fresh thyme
- 2 tablespoons olive oil
- 32 - 36 ounces (2 packages) potato gnocchi
- 2 tablespoons butter
- 1 teaspoon kosher salt (more to taste)
- 1/2 teaspoon freshly ground black pepper (more for serving)
- 6 ounces gruyere cheese, grated
- 1/4 cup dry white wine
- 1 teaspoon balsamic vinegar or sherry vinegar

Recipe Notes
- If you don't have gruyere cheese, you could use fontina, asiago, white cheddar or your favorite Italian blend.
- Store any leftovers in an airtight container in the fridge for up to four days.
Here's how to make it:
- Line a large baking sheet with parchment and set to the side. Place a large skillet on medium heat with the olive oil. Add the gnocchi and cook until it becomes tender and a bit brown. Add a bit more olive oil if needed to keep from sticking.
- Spread the gnocchi out on the baking sheet.
- Using the same pan on medium heat, add the butter and sliced onions, thyme, salt and black pepper. Stir often and cook until the onions are brown and caramelized, about 10 to 12 minutes.
- Turn the oven on to broil. When the onions are very brown add the wine and scrape the bottom and sides to combine all the bits. Add the balsamic.
- Pour the mixture over the gnocchi.
- Sprinkle the grated gruyere over the onions.
- Place under the broiler and melt until the cheese is golden brown and bubbly.
- Place into bowls and serve immediately and enjoy!
