Ingredients
- 8 ounces mascarpone cheese, at room temperature
- 5 ounces cream cheese, at room temperature
- 4 large ripe bananas, mashed
- 1 1/4 cup brown sugar
- 2 eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup fresh raspberries
- 1/2 cup chopped nuts (such as pecans, almonds or walnuts), optional

Recipe Notes
- If you'd like these muffins to be gluten-free, use gluten-free flour.
- I used overripe bananas, which makes the muffins extra sweet and moist.
- You can use your milk of choice in this recipe (I used almond milk).
- I added half a cup of chopped walnuts, but you could use pecans or no nuts at all.
- Store leftovers in an airtight container in the refrigerator.
Here's how to make it:
- In a large mixing bowl, add the softened mascarpone cheese and cream cheese and mix well.
- Add the mashed bananas and stir to blend.
- Add the brown sugar, eggs, milk and vanilla extract. Mix until combined.
- In another mixing bowl, add the flour, baking powder, baking soda, cinnamon and salt. Mix well.
- Add the dry ingredients to the wet ingredients and stir until mixture is combined. Do not over-mix.
- Gently fold in the raspberries. Gently fold in the nuts, if using.
- Fill greased or lined muffin tins until nearly full with batter.
- Bake in a preheated 350-degree F oven for about 18 to 20 minutes or until golden brown and set.
- Allow the muffins to cool a bit before serving.
