Confession: I'm not a huge fan of pork tenderloin. Yes, I've found some pork tenderloin recipes that I've enjoyed and that were juicy, but for the most part, they tend to turn out dry for me. But I do have a hard time not buying one or two when they're on sale. I just can't resist the price.
Instead of cooking the latest pork tenderloin I pulled from my freezer whole like I usually do (or attempt to do), I decided to chop it up and create a stir fry. Success! This easy pork and broccoli stir-fry recipe kept the pork juicy and tender. I will definitely be throwing pork tenderloins in my grocery basket the next time they're on sale!
This juicy high-protein pork and vegetable recipe cooks up quicky and has quick and easy prep. To make this Asian pork dinner you will need just a few ingredients. Here is what to gather so you can get to cooking: a pork tenderloin, fresh broccoli, onion, garlic, cooking oil, hoisin sauce, sweet soy sauce and low-sodium soy sauce. Soy sauce and sweet soy sauce are different Asian sauces. Sweet soy sauce is sweet, thick and rich. I use ABC Sweet Soy Sauce, but use your favorite. The pork recipe cooks up in one pan in about 10 minutes!
This budget-friendly recipe is a quick and easy dinner that's sure to please the entire family. Serve the pork and vegetables over rice or Asian noodles. It would also be delicious over quinoa or mashed potatoes. I serve mine over brown rice.
Cuisine: Asian
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 4
Ingredients
- 1 pork tenderloin (about 1 pound), cut into bite-sized pieces
- 2 - 3 cups fresh broccoli florets
- 1 onion, sliced
- 2 - 3 cloves garlic, minced
- 1 teaspoon cooking oil (I used olive oil)
- 1/4 cup hoisin sauce
- 2 - 3 tablespoons sweet soy sauce
- 1 - 2 tablespoons low-sodium soy sauce
Here's how to make it:
- Put the sliced pork into a bowl and drizzle with a little bit of low-sodium soy sauce. Let it sit while you cut the onion and broccoli, and chop the garlic.
- Heat the cooking oil in a large skillet or wok. Add the broccoli and onion. Cook, stirring, over medium-high heat until broccoli is crisp-tender. Add the garlic and cook for 30 seconds.
- Push the vegetables to one side of the pan. Add the pork to the other side and cook, stirring, until almost cooked through, about 2 to 3 minutes. For a little kick, add some crushed red pepper flakes.
- Add the hoisin sauce, sweet soy sauce and low-sodium soy sauce. Cook, stirring, until meat and vegetables are coated and sauce has slightly thickened, about 2 minutes. Taste and add more hoisin, sweet soy sauce or soy sauce, to taste. Season with black pepper, if desired. (I didn't really measure the amounts of hoisin sauce, soy sauce and sweet soy sauce that I put in my dish. I measured by sight and my heart. But the amounts above are pretty close.)
- Serve over rice, if desired. Store any leftovers in an airtight container in the fridge for up to three days.
