Rosa Parks' "Featherlite" Peanut Butter Pancakes Recipe Is a Bite of History

Celebrate Black History Month and National Pancake Week with this easy peanut butter pancake recipe from the courageous Rosa Parks. The pancake recipe was written in her handwriting on the back of a bank envelope that is is currently in a collection at the Library of Congress.

Ms. Parks wrote that they were "featherlite," and that is exactly what you will find. The peanut butter makes an interesting addition that is a very fun change for breakfast or brunch. I made them for my friend's daughter and we both agreed that they were one of our new favorite pancake recipes.

To make Rosa Parks' peanut butter pancakes you will need the following ingredients: all-purpose flour or gluten-free flour, baking powder, granulated sugar, salt, creamy peanut butter, an egg, vegetable oil or shortening and whole milk. Serve these light and fluffy from-scratch, low-sodium pancakes for breakfast or brunch. You could even serve them for dessert with a dollop of whipped cream.

  • I used natural peanut butter for this recipe.
  • You could use gluten-free flour for gluten-free pancakes.
  • Feel free to add chocolate chips if you'd like. Peanut butter and chocolate is never a miss!

Here's how to make it: 

  1. Combine the dry ingredients in a bowl.
  2. Combine the egg, oil and peanut butter. Whisk together.
  3. Add milk and combine thoroughly.
  4. Gently add the dry ingredients, a bit at a time, to the wet ingredients and mix well.
  5. Place a small amount of vegetable oil or shortening in a pan set over medium heat. Spoon the batter into the pan.
  6. Cook for about 3 minutes per side.
  7. Serve with maple syrup or whipped cream, if desired.
