The Best Chocolate Chip Pancakes Recipe for National Pancake Week

Pancakes are so popular they don't just get a day, they get a whole week! National Pancake Day is February 28, 2024, and National Pancake Week is February 19 through 25. Surveys have found that the most popular topping besides butter and maple syrup is chocolate chips. We get it! Here is a fluffy chocolate chip pancake recipe to help you celebrate.

To make these fluffy pancakes for breakfast or brunch you will need just a few basic ingredients. Here is your shopping list: all-purpose flour, baking powder, salt, granulated sugar, milk, an egg, butter, vanilla extract and chocolate chips. The batter is mixed up and allowed to rest for about five minutes before cooking. Letting the pancakes rest results in the most fluffy pancakes.

Recipe Notes

  • Use whatever kind of chocolate chips you like for this recipe. Milk chocolate, dark chocolate, bittersweet chocolate or semisweet chocolate chips would all be delicious.
  • Don't skip the five minutes of rest time. This lets the gluten relax, resulting in the fluffiest pancakes.

Here's how to make it:

  1. Put the flour, baking powder, salt and sugar into a mixing bowl. Whisk to combine.
  2. In another mixing bowl, stir together the milk, egg, melted butter and vanilla.
  3. Add the dry ingredients to the wet ingredients until just combined.
  4. Fold in the chocolate chips. Let the batter rest for 5 minutes.
  5. Heat a nonstick skillet over medium-high heat. Add a little butter or spray with nonstick cooking spray.
  6. Pour about 1/4 cup of the batter into the pan for each pancake. Top with additional chocolate chips, if desired.
  7. Cook for about 3 minutes or until you see bubbles form. Flip the pancakes over and cook until cooked through. Serve hot with desired toppings.
