When I stumbled upon this broccoli casserole recipe I was touched by the author's stories and memories of the dish. To make this tasty budget-friendly broccoli casserole recipe you will need just five ingredients. Here is your short shopping list for this vegetable side dish: fresh broccoli, cream cheese, sour cream or milk, Italian breadcrumbs and butter. You can also add an optional pinch of ground nutmeg to the casserole, too. The casserole bakes up in about 20 minutes.

Ingredients

  • 1 pound broccoli, chopped into bite-sized pieces (fresh or defrosted frozen)
  • 4 ounces cream cheese, softened
  • 2 - 3 tablespoons sour cream or milk
  • pinch of ground nutmeg (optional)
  • 1/2 cup Italian seasoned breadcrumbs (see Recipe Notes)
  • 2 tablespoons butter, melted

  • If you don't have seasoned breadcrumbs just use regular or panko and add 1 tablespoon of dried Italian seasonings.
  • Turn the vegetarian side dish into a meal by adding cooked shredded chicken. 

Here's how to make it: 

  1. If using fresh broccoli, place a pot of water on the stove on high. Bring water to a boil and gently add chopped broccoli and cook for 2 minutes. Drain and set aside. (Skip this step if you are using defrosted frozen broccoli.)
  2. In a medium bowl, mix the milk or sour cream with the soft cream cheese. Stir until blended well. If the mixture is too thick, just add a bit more milk to thin it out. You don't want it watery, but you want it thin enough to coat the broccoli. Add nutmeg and a bit of salt and pepper to the sauce and mix well.
  3. Add the broccoli to the cream cheese sauce. Mix together.
  4. Put the mixture into a greased casserole dish. 
  5. Melt butter in a bowl and then add breadcrumbs. Use a fork to gently combine. Spread the breadcrumb mixture over the broccoli.
  6. Bake in a preheated 350-degree F oven for about 20 minutes or until the top is brown and crunchy.
