Quick & Healthy Grilled Vegetables Recipe: A Nutritious Side Dish As Easy As 1, 2, 3

We love grilled vegetables at our house. Grilled vegetables are delicious on their own and so versatile to add to so many recipes. Change up the spice and they can be Moroccan, Mexican or Greek! My favorite preparation for grilling vegetables is simply olive oil, salt and black pepper.

Grilled vegetables can easily be added to pasta, salads or served as a simple side dish with a protein like chicken, pork, seafood, lamb or beef. Here are some vegetables that grill up beautifully:

  • zucchini
  • yellow squash
  • tomatoes
  • sweet peppers
  • onions
  • eggplant
  • avocado
  • cabbage
  • potatoes 
  • broccoli 
  • green beans

  • Serve grilled vegetables as-is or cut into smaller pieces to add to a salad or pasta.
  • Be sure to oil the grates of the grill so the vegetables don't stick. 

Here's how to make it: 

  1. Light grill and heat to 450 degrees F. 
  2. Wash and cut vegetables into large chunks and place on a high-sided cookie sheets. Drizzle with olive oil and add salt and black pepper. Toss to coat thoroughly.
  3. Spray or oil grill. Place vegetables on a clean hot grill for about 4 to 6 minutes per side, or until soft and cooked through.
