Low-Carb Portobello Mushroom Pizza Recipe: A Healthier Pizza Night

Craving a pizza but watching your carbs? I feel ya. But you can still have pizza night without making a homemade pizza dough. Really! This easy low-carb portobello mushroom pizza recipe is hearty, satisfying and on the table in about 30 minutes.

All you need for these healthy mushroom pizzas is portobello mushrooms, olive oil, pizza sauce (jarred or try this quick no-cook pizza sauce recipe), salami or pepperoni, red onion, black olives, mozzarella cheese and parsley or basil, for garnish. Don't like my topping choices? Use whatever YOU like. Customize these crustless pizzas to fit your personal tastes.

Serve these low-carb portobello pizzas for lunch or for dinner with a side salad. They even make great appetizers.

Ingredients

  • 8 large portobello mushrooms, about 4 inches in diameter
  • 4 tablespoons olive oil
  • 3/4 cup pizza sauce
  • 4 ounces salami or pepperoni slices, chopped
  • 1/2 red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 2 cups mozzarella cheese, shredded
  • parsley or fresh basil, for garnish (optional)

  • Feel free to change out any ingredient toppings or go completely vegan.
  • Make sure to use large mushrooms as long as they're shaped like a cup to hold fillings.
  • Remember, mushrooms contain an abundance of water, so make a cross in the base of the mushroom under the side that will connect the pan or grill top; allow surplus moisture in the mushroom to drain out while baking so the filling inside doesn't end up saturated.

Here's how to make it: 

  1. Carefully break or cut the stems off the mushrooms if they have them. Chop stems and set aside to use as filling.
  2. Place mushrooms cap side up on a foil-lined baking sheet. Using a small, sharp knife, cut a small cross in the mushroom, taking great care not to split the mushroom. Brush the tops and bottoms with oil and season with salt and pepper.
  3. Fill the gill side of the mushrooms with pizza sauce and half your toppings, except for the cheese. Bake in a preheated 350-degree F oven until mushroom is heated, for about 10 minutes. Remove from oven and top with additional cheese and remaining toppings, except for parsley. Bake an additional 10 minutes until the cheese is melted. Remove from oven, garnish with fresh or basil.
