Asian Avocado & Cucumber Salad Recipe: From the Farm to the Fork

Fresh summer produce is everywhere right now. This cucumber and avocado salad recipe is great for cucumbers of all kinds. I prefer the Persian or English varieties for this dish because they don't have a lot of seeds and are very crunchy, but any kind will do even garden cucumbers. The simple addition of freshly sliced green onions, toasted almonds, sesame seeds and avocado combine with an Asian dressing to really spice things up. Pair it with a protein like easy sesame ginger chicken (recipe coming soon!) and your summer meal is complete.

Here are the fresh and flavorful ingredients you'll need for this avocado and cucumber salad: toasted sesame oil, rice vinegar, toasted sesame seeds, sugar, soy sauce, crushed red pepper flakes, ripe avocados, cucumbers, green onions and slivered almonds. Great variety of ingredients, right?

Serve this fresh vegetable salad as a side dish with your favorite proteins for dinner or alone for a light lunch.

Ingredients

Dressing 

Salad 

  • 2 ripe avocados
  • 1 pound cucumbers (such as Persian or English), trimmed and thinly sliced
  • 2 green onions or 2 small shallots, trimmed and thinly sliced
  • 2 tablespoons toasted slivered almonds
  • toasted sesame seeds, for servings

  • I like to halve the avocado, remove pit and slice it into chunks in the skin. Then I use a spoon to scoop out the flesh.

Here's how to make it: 

  1. Combine the dressing ingredients in a container with a lid and set aside.
  2. Assemble salad by cutting the avocado into chunks and placing in a medium-sized salad bowl.
  3. Add the dressing and toss gently.
  4. Add cucumbers and green onions or shallots to the avocado and mix gently.
  5. Top with the toasted sesame seeds and a sprinkle of salt and pepper, if desired.
  6. Serve as a side to any main dish.
