Broccoli and cheese is a classic combination. These broccoli cheese egg muffins are great for breakfast on the go and for meal prep, too! They also make a wonderful side dish with dinner.
I feel good about eating these easy egg muffins and feeding them to the kids because they’re both high in protein and filling (perfect for my son who is “so hungry” well before his school lunch time!). To make these broccoli cheese egg cups you will need olive oil, broccoli, eggs and cheddar cheese. If you want some add-ins, grab those ingredients, too.

Ingredients
- 1 teaspoon extra virgin olive oil
- 4 cups broccoli florets
- 4 whole large eggs
- 1 cup egg whites
- 1/2 cup shredded cheddar cheese (divided)
Optional Add-ins
- tomatoes
- mushrooms
- bell peppers
- onion
- kale
- turkey bacon
- spinach, chopped scallions and ham (green eggs and ham)
Recipe Notes
- If you want to make them in advance, wrap them in plastic wrap, stick them in the fridge and when you’re ready to serve, just pop them in the microwave for 30 to 60 seconds.
- You can buy a carton of egg whites in most grocery stores.
- Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
Here’s how to make it:
- Steam broccoli with a little water for about 6 to 7 minutes. Crumble cooked broccoli into smaller pieces and add oil, salt and pepper, to taste. Mix well.
- Spray a nonstick muffin tin with cooking spray. Spoon broccoli mixture evenly into nine cups.
- In a medium bowl, beat egg whites, eggs, 1/4 cup of the grated cheese, salt and pepper. to taste.
- Pour over the broccoli until tins are a little more than 3/4 full. Top with the remaining cheddar cheese.
- Bake in a preheated 350-degree F oven in the oven until cooked, about 20 minutes.
