Ingredients
- 2 - 3 cups chopped broccoli, steamed until crisp-tender
- 12 eggs
- 2 cups shredded yellow or white cheddar cheese

- Combine the eggs, cheese and broccoli in a bowl. Stir. Season with salt and pepper. Pour the mixture into a greased 13x9-inch baking dish. You could use whatever vegetable you like, just make sure it's cooked to at least crisp-tender before adding it. Try other cheeses like gruyere, Swiss, fontina or Monterey Jack.
- Bake in a preheated 350-degree F oven for about 25 to 30 minutes or until the eggs are set. Cool about 5 minutes before cutting into squares. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
