Ingredients
- 2 cups flour (all-purpose or gluten-free 1:1 flour)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 cups ripe mashed bananas (about 4)
- 1/2 cup vegetable oil
- 1 cup brown sugar, packed
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1/3 cup brown sugar, for topping (optional)
Here's how to make it:
- In a large mixing bowl, whisk together the flour, baking soda, salt and cinnamon. (For gluten-free banana bread use gluten-free flour.)
- In another large mixing bowl, stir together the bananas, oil, brown sugar, eggs and vanilla. Add the dry ingredients to the wet ingredients. (You could toss some chopped walnuts or chocolate chips into the batter, if desired.)
- Pour the batter into a greased 9x5-inch loaf pan. Sprinkle the top with the 1/3 cup additional brown sugar, if desired.
- Bake in a preheated 350-degree F oven for about 50 to 55 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from the pan. Store leftover banana bread in an airtight container.
