The high-protein dessert recipe got its start in Japan, but it's not really cheesecake. And yet, by combining two simple ingredients and waiting a while, you magically get a result that tastes remarkably like cheesecake. No stirring, no mixing and no baking involved. I know, whaaaaat? But it's true! The first ingredient is plain Greek yogurt. The yogurt adds creaminess and the "cheese" portion of the cheesecake. The second ingredient is Biscoff cookies. The spiced cookies add the "cake" portion of the cheesecake. Created in a Belgium bakery in 1932, the iconic Biscoff cookie is known for its uniquely spiced caramel taste. (I used a gluten-free version of the cookie: Speculoos spiced cookies by ChocZero.)
The simple Japanese cheesecake is delicious and so nourishing that it works well as a healthy snack or quick and easy breakfast. Similar to overnight oats, you just prep it the night before and it's ready to go when you wake up in the morning. Plus, check out the health benefits of protein and the health benefits of Greek yogurt.
The easy breakfast recipe takes less than five minutes to prep the night before you plan to enjoy it. To make this delicious snack recipe, here are the two simple ingredients you'll need: plain Greek yogurt and Biscoff cookies (or similar). That's it! All you do is put the cookies into the yogurt, cover it then place it in the refrigerator for at least four hours (or overnight). That's when the magic happens. When you re-open the yogurt container, the cookies will have softened to the point where they taste like sweet cheesecake crust all mixed in. Boom – cheesecake!
Scoop this seriously yummy Japanese cheesecake into a bowl or eat it straight from the yogurt container. Add some additional crushed Biscoff cookies on top for texture, if you like. Try it topped with your favorite chopped nuts, berries or a drizzle of honey. So easy, nutritious and delicious, and budget-friendly, too.
