Crispy Fried Garlic (Toi Phi) Recipe Is the Condiment You Need in Your Life

Toi Phi, or crispy fried garlic, is a must-make garnish for not only Asian and Vietnamese dishes, but anything! It is crunchy, garlicy and adds so much flavor to stir-fry recipes, noodles, rice, dumplings, chicken, pork, fish, beef or even sauces, soups and sandwiches.

Don't throw away the oil after making this crispy fried garlic recipe. You can use the oil to cook proteins in, for marinades and for salad dressings.

Servings: Makes about 5 tablespoons

Ingredients

Here's how to make it: 

  1. Put the chopped garlic and oil into a small skillet or wok. Cook over medium-high heat until garlic is golden brown, about 3 to 4 minutes. (Watch it close! The garlic can burn quickly.) Turn the heat off. Let the garlic cool completely.
  2. Pour the garlic through a mesh strainer to separate the garlic oil from the garlic pieces. Put the garlic pieces onto a paper towel to drain. Store the garlic in an airtight container.

Note: You can use the garlic oil in recipes, too. Store it in a mason jar or airtight container for about one month at room temperature.
