Ingredients

  • 1 tablespoon olive oil
  • 4 large jalapenos, minced
  • 1 red onion, chopped
  • 1 large bell pepper or poblano pepper, chopped
  • 6 cups chicken broth
  • 2 potatoes, cubed
  • 1 bag (16 ounces) frozen corn 
  • 2 - 3 cups cooked, shredded chicken
  • 4 - 5 strips bacon, cooked crisp and crumbled
  • 2 cups cheddar cheese
  • 1 package (8 ounces) cream cheese, softened
  • fresh chopped parsley
  • 1 cup heavy whipping cream

  • You may be leery about adding four jalapenos, but trust me, the soup is not overly spicy at all. Add 'em! 
  • If you use a poblano instead of a bell pepper, the soup will be spicier. 
  • You could add a can of drained white beans to the soup for added fiber. Who doesn't need a little extra fiber in their diet?

Here's how to make it:

  1. Cook the jalapenos, onion and pepper in the olive oil until soft.
  2. Add the chicken stock and potatoes. Cook until potatoes are tender.
  3. Stir in the corn, cooked chicken, cooked bacon, cheddar cheese, cream cheese and a little parsley. Cook until cheese is melted.
  4. Add the cream and slowly heat through. Season with salt and pepper, to taste.

This soup is delicious! I made it exactly like the printed recipe except for one thing which may seem a little weird...after tasting, it seemed a little acidic so.....I added some sugar in it, and then it was absolutely perfect! I just put in enough to bring about a slight sweetness, and it was probably about four tablespoons. That may seem like a lot, but no one commented on it tasting sweet, they just gobbled it up including hubby who said it was really good and isn't overly fond of soups. This is one I'll be making again!!

I made this soup for my wife, daughter, and son in law and followed the recipe exactly and it was fantastic. We are all fans of spicy so i used a poblano pepper and this soup was a hit with all 4 of us. As with most recipes (for me anyway) I triple the prep time, it took more than an hour to cook the bacon and chicken, peel and cut the potatoes and cut the onion and pepper but it was absolutely worth it. I will be making this again and will make one minor change and use only one potato but that is strictly a personal thing. Thanks for posting!!!
