Melt-in-Your-Mouth Pumpkin Donut Recipe: A Baked Vegan Pumpkin Doughnut Recipe With Cinnamon-Sugar Dust

Topped with cinnamon sugar, these vegan pumpkin doughnuts are super duper fluffy, and so easy to make! No one will even know they're vegan.

Cinnamon Sugar Coating

Here’s how you make them:

  1. Generously grease a doughnut pan. Preheat oven to 350 degrees F.
  2. In a large bowl, whisk the dry ingredients.
  3. In a separate bowl, whisk together the pumpkin puree, coconut oil and almond milk.
  4. Gently fold the wet mixture into the dry mixture. Stir to combine. Do not overmix.
  5. Spoon mixture into prepared doughnut pan and bake for 10 to 12 minutes, or until the doughnuts spring back when lightly pressed. Cool. 
  6. For the topping, melt the coconut oil. Set aside. Combine the sifted sugar and cinnamon in a medium-sized bowl. Set aside.
  7. Once the doughnuts are cool enough to handle, dip them in the melted coconut oil, then roll them in the cinnamon-sugar mixture.

These will be made at my house within days, @chefgigi. How many donuts does it make? And which doughnut pan do you recommend? Metal or silicone? I'm going to order one today. Had a physical today and I've gained 5 pounds. I am blaming you! ;-)

Hahahahahahha! Donna John depending how wide and deep your mold pan is you can yield six large - a doz reg, and 2 doz mini. Everything in moderation right! Love my Vegan friends ! MWAH! I LOVE Working silicone, but items w less structure that are very delicate and can loose shape easy-- I prefer metal pans. So use metal. I chose to use cake flour in this recipe because the gluten proteins are smaller in cake flour so the end result will render a much more tender product . And if you really
Want super duper light -- add a lots of air when mixing - ( use the whip attachment instead of paddle in a stand mixer) adding air creates lots of bubbles so
In the oven the air escapes which also means the end result will be a much more delicate product! ( it happens more when you add yeast ) Just be careful that tossing in the cinnamon sugar with the coconut oil at the end doesn't deflate or crush them. I hope you love them-- u can increase the pumpkin flavor by adding 1/4-1/2 teaspoon of pumpkin pie spice seasoning to the Cinnamon sugar mix at the end; too ! ( shhh secret ) !

Got it! And I will add the pumpkin pie spice. Mmmm! I've never made donuts before, so it should be interesting. I've never made them because I thought you had to fry 'em. Love that these are baked. Ordering my metal doughnut pan now... Chef Gigi Gaggero
