If you have seen some of my recipes you know I love an easy sheet-pan recipe. This sheet-pan spiced salmon recipe with shaved brussels sprouts has a lovely lemon sauce drizzled over the top, keeping everything full of flavor and moist. This sheet-pan recipe is on the table in about 25 minutes!
To make this seafood recipe you will need the following wholesome ingredients from your fridge and pantry: salmon fillets, brussels sprouts, fresh lemons for juicing and zesting, fresh garlic, dried oregano, smoked paprika, fresh or dried thyme, black pepper, extra-virgin olive oil, shallots, salt and optional crushed red pepper flakes if you want it a little spicy.

Ingredients
- 2 large lemons, washed, zested and juiced
- 8 cloves garlic (divided)
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
- 1 teaspoon ground black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 4 tablespoons extra virgin olive oil (divided)
- 1 pound brussels sprouts, trimmed and thinly shaved (about 6 cups)
- 2 shallots, thinly sliced (about 1/4 cup)
- 4 skin-on salmon fillets, about 6 ounces each
Here's how to make it:
- Line a large baking sheet with aluminum foil and preheat oven to broil with the rack in the middle. Whisk together the oregano, paprika, thyme, black pepper, crushed red pepper flakes (if using), lemon zest, lemon juice, 4 garlic cloves and 1 tablespoon olive oil. Season with salt, to taste.
- Smash the 4 remaining garlic cloves and place them with the shaved brussels sprouts and shallots on the baking sheet. Drizzle the vegetables with 1 tablespoon olive oil and a good pinch of salt. Toss to combine.
- Nestle the salmon filets into the brussels sprouts and drizzle the whole tray with the lemon mixture.
- Broil for about 10 minutes, or until the salmon flakes with a fork. (The USDA recommends 145 degrees F internal temperature.)
- Serve warm and enjoy! Store any leftovers in an airtight container in the fridge and reheat in the microwave.
