I'm a little late to the party when it comes to sheet-pan recipes. My loss. Sheet-pan recipes are not only quick to prep, but you don't have to worry about many side dishes – if any – depending on the recipe. This sheet-pan meatballs recipe with charred broccoli was a pleasant surprise. The meatballs are tender and juicy, and the broccoli is flavorful and moist because of the lemony mayo it is coated in before being baked. Delicious!
You don't need a long list of ingredients to make this meat and vegetable dinner either. No trip to the store was required when I decided to give it a try. Here is what I grabbed from my fridge and pantry for this high-fiber, high-protein recipe: ground beef (you can use ground turkey), an egg, breadcrumbs, grated Parmesan cheese, an onion, fresh garlic, fresh broccoli, mayonnaise, a lemon for juicing and garlic salt.
The meatballs and broccoli bake up together on a baking sheet or in a baking dish. The broccoli was amazing and will be a side dish staple at my house. The meatballs are simple, yet full of flavor. The two together are a winning combination. Plus, you get all the health benefits of broccoli.
This meatball dinner can be served as a complete meal, or add your favorite side dishes. I served mine with quinoa and pickled red cabbage and onion.

Ingredients
Meatballs
- 1 pound lean ground beef or ground turkey
- 1 egg
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup minced onion
- 3 cloves garlic, minced
Broccoli
- 1 head broccoli, but into florets
- 1/4 cup mayonnaise
- 1 - 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1/2 - 1 teaspoon garlic salt
Here's how to make it:
- Combine all the meatball ingredients in a mixing bowl. Season with salt and black pepper. You can use ground beef or ground turkey.
- Shape into 1-inch meatballs. I used a tablespoon so they were all the same size. If you make your meatballs bigger, you may need to increase the cooking time.
- Place the meatballs onto one side of a baking sheet or baking dish. You can line the baking sheet or dish with parchment paper or aluminum foil for easier cleanup. If you're worried about them sticking, drizzle with a little olive oil.
- Stir together the mayonnaise, lemon juice (fresh is best), garlic and garlic salt in a bowl. Season with black pepper, if desired.
- Add the broccoli and stir to coat well.
- Pour the broccoli onto the other side of the baking sheet or baking dish.
- Bake in a preheated 450-degree F oven for about 20 minutes, or until the meatballs are cooked through and the broccoli tender and charred a bit. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
