I love summer with the abundance of fresh produce available for wonderful, healthy and nutritious recipes. Our Midwest farmers market produce is just starting to deliver a colorful array of fruits and vegetables, and this nectarine, tomato and corn salad recipe is the perfect way to celebrate those summer fresh fruits and vegetables.
This fruit and vegetable salad goes from cutting board to platter and is ready in just 10 minutes. The vibrant colors of the nectarines, tomatoes and corn are topped with the tangy and sweet balsamic vinaigrette, and tastes like summer should, fresh and sweet!
To make this healthy summer celebration salad recipe you only need four ingredients. Here is your wholesome, farm-to-table shopping list: fresh tomatoes, fresh nectarines, fresh corn on the cob and a balsamic vinaigrette. You can add optional feta cheese, if desired. I used a homemade honey balsamic vinaigrette, which was wonderful, but your favorite balsamic vinaigrette will work beautifully.
Serve this summer salad for lunch or as a refreshing side dish with dinner. We like it with roasted chicken and some homemade sourdough bread. Not only is this summer recipe easy to make and beautiful to serve (eat the rainbow!), but you get the health benefits of corn, the health benefits of nectarines and the health benefits of tomatoes.

Ingredients
- 2 large beefsteak or heirloom tomatoes, each cut into 8 wedges
- 2 - 3 ripe nectarines, sliced (you could use peaches instead)
- 2 ears of fresh corn on the cob, kernels removed, or 1 cup frozen corn, thawed
- 1/4 cup balsamic vinaigrette (try my honey balsamic vinaigrette recipe)
- 1/2 cup feta cheese, crumbled (optional)
Here's how to make it:
- Put the sliced tomatoes and nectarines onto a serving platter. (You could use peaches instead of nectarines.)
- Add the corn and optional feta on top. Sprinkle with salt and black pepper.
- Drizzle with the vinaigrette before serving and enjoy! Store the salad in an airtight container in the fridge.
