This tomato, cucumber and peach salad recipe with feta and quick pickled shallots spoke to me on all levels. Fresh, healthy ingredients – and ingredients I love – all combined into one beautiful, healthy, colorful farmers market salad? Count me in.
Several of my friends (and millions of people worldwide!) are enjoying the health benefits of the Mediterranean Diet. I'm trying to incorporate Mediterranean ingredients and recipes into my diet more, too. This healthy fruit and vegetable salad is full of wonderful, seasonal, farm-to-table ingredients.
Here is your shopping list for this Mediterranean salad recipe: shallots, red wine vinegar, heirloom tomatoes (read about the health benefits of tomatoes), fresh peaches (check out the health benefits of peaches), English cucumber (cucumber has health benefits), fresh herbs, feta cheese, olive oil and honey. The sliced shallots sit in red wine vinegar for a quick pickling as you prepare the other ingredients. Toss everything together and look at that beautiful salad you created! Not only that, the flavors all complement each other. It's delicious!
Cooking Tips: For a vegan salad, leave out the feta cheese or use a plant-based cheese. To make this a heartier salad and add even more nutrition, add some cooked quinoa or your favorite grain.
Serve this tomato cucumber salad as a side dish with dinner or as a light lunch. I served mine with peach bourbon grilled pork chops and roasted carrots.

Ingredients
- 1 medium shallot, sliced
- 3 tablespoons red wine vinegar
- 2 heirloom tomatoes, cut into 1-inch slices
- 2 peaches, cut into wedges
- 1/2 of an English cucumber, sliced thin
- 1 cup chopped mixed herbs (mint, basil, parsley, cilantro, chives, oregano, thyme, etc.), packed
- 1/2 cup crumbled feta cheese (or more, to taste)
- 3 tablespoons olive oil
- 1 teaspoon honey
Here's how to make it:
- Put the sliced shallots into a small bowl. Add the red wine vinegar and stir. Let the shallots sit while you prepare the rest of the salad. (You could use white wine vinegar instead of red wine vinegar.)
- Put the sliced tomatoes, peaches and cucumber into a bowl. (I used a red and yellow heirloom tomato. If you can't find heirloom tomatoes, use regular tomatoes. I removed some of the seeds from the tomatoes before adding them to the salad.)
- Add the chopped herbs and feta cheese.
- Stir the olive oil and honey into the shallots. Season with salt and pepper.
- Pour the shallots and liquid over the salad.
- Gently toss to coat. Add more salt and pepper, if needed. Serve. Store the salad covered in the fridge.
