This satisfying breakfast takes only about 10 minutes to make, so it's a quick, nutritious and delicious way to get your day going strong.
You can use your milk of choice for this scrambled eggs recipe. I used 2 percent milk. As for the salmon, pre-cooked fresh salmon or canned salmon both work. You can pre-cook the broccoli or use steam-in-bag broccoli that's ready in a couple of minutes. Quick and easy! Garnish the fluffy scrambled eggs with some fresh herbs, such as parsley, if you like.
These tasty eggs are perfect for lunch or for brunch with your favorite toasted bread or with fresh fruit on the side. But they're hearty enough to be breakfast-for-dinner worthy, too!

Ingredients
- 6 eggs
- 2 tablespoons milk
- 4 ounces cooked or canned salmon
- 4 ounces cooked broccoli, chopped
- 3 ounces feta cheese, crumbled
- 1/2 cup shredded Parmesan cheese (divided)
Here's how to make it:
- In a small mixing bowl, add the eggs and milk. Season with sea salt and black pepper, to taste, if desired. Whisk to combine.
- Add the mixture to a nonstick skillet over medium heat. Add the salmon, broccoli, feta and half the Parmesan. Using a wooden spoon or spatula, scramble the eggs until they're done to your preference, about 3 to 4 minutes.
- Top with remaining Parmesan.
- Serve eggs on their own, or with toast and/or fruit. Garnish with fresh herbs, if desired. Store leftover eggs in an airtight container in the refrigerator and reheat in the microwave.
