My daughter bought me an espresso maker for my birthday. One thing I struggled with was frothing milk. I was definitely on the struggle bus. At one point, I ordered a cheap $6 milk frother in case I never learned how to use the attached frothing wand on my machine. I am happy to inform you that I am now the milk frothing queen and make delicious lattes.
One night when I was watching Somebody Feed Phil on Netflix, Phil mentioned that every day his dad, Max, would ask, "Are my eggs fluffy?" He said it so much that the phrase is on Max's headstone. But Phil never told us how the eggs were cooked to make them fluffy enough to get his dad's approval. I immediately thought of that frother that was starting to move its way to the back of the drawer. Why not? If a frother can make milk light and airy, why can't it do it for eggs? Well, it does!
These easy scrambled eggs take minutes to whip up (literally) and will be a favorite with anyone who loves fluffy eggs. Here is what you need to make this simple egg recipe: eggs (check out the health benefits of eggs), butter, salt and black pepper.
Surprise your family with a plate of fluffy scrambled eggs for breakfast or for brunch (I sometimes eat protein-rich eggs for lunch). Get the kids involved and let them froth the eggs. What a fun way to start the morning.

Ingredients
- 3 eggs
- 1 tablespoon butter
- salt and black pepper, to taste
Recipe Notes
- For some freshness, add some chopped fresh herbs on top of the eggs. I like to add fresh dill.
- Cook as many eggs as you need.
- If you like to add milk to your scrambled eggs, go for it.
- Don't like cooking with butter? Use olive oil instead.
Here's how to make it:
- Crack the eggs into a bowl.
- Use the frother to whip the eggs until they start forming air bubbles.
- Heat the butter in a nonstick skillet. Pour in the eggs.
- Over medium-low heat, gently swirl the eggs with a rubber spatula until they reach your desired doneness. Season with salt and black pepper, if desired.
- Serve the eggs hot.
