To make this tasty egg recipe, here's what you need to gather: eggs, cottage cheese and fresh spinach. That's it! You combine the gluten-free ingredients in a mug then microwave it until cooked through. So simple!
You can add in your favorite vegetables, cheeses or meats to personalize this recipe. Or, you can garnish the mug full of eggs with fresh herbs, such as parsley or dill, for added flavor. Make it your own!

Ingredients
- 2 eggs
- 1/3 cup cottage cheese
- 1 ounce fresh baby spinach, torn into pieces
- fresh parsley or dill, for garnish (optional)
Here's how to make it:
- Spray a large mug with cooking spray. Add the eggs and cottage cheese. Season with sea salt and black pepper, then whisk with a fork to blend.
- Add the spinach and stir to combine.
- Microwave for 2 minutes. Remove and stir. Cook for 1 more minute or until eggs are cooked through.
- Serve immediately. Top with fresh herbs or your other favorite toppings. (Optional topping ideas include fresh herbs (like parsley or dill), scallions, bacon crumbles, diced avocado, shredded cheese, etc.) This recipe is best eaten fresh, but any leftovers can be stored in an airtight container in the refrigerator.
