If you need an incredibly tasty, quick dinner for friends or family then look no further! This easy spinach and feta stuffed salmon recipe is so delicious and easy to prep. This seafood recipe comes together in about 20 minutes and has only five ingredients.
To make this moist, juicy Mediterranean-inspired salmon recipe you will need fresh salmon fillets, olive oil, onion, fresh baby spinach and feta cheese, which may be the healthiest cheese in the world. (Don't forget the health benefits of salmon and the health benefits of spinach, too!)
The onion and spinach are cooked together on the stovetop before being stuffed into the salmon fillets. Add the creamy crumbled feta cheese and bake until the fish is cooked through. So quick and easy!
Serve this baked salmon with rice or your favorite grain and you have a simple, filling warm lunch or savory dinner. You could also add a vegetable or fresh salad as a side dish.

Ingredients
- 4 salmon filets (about 6 ounces), skin removed if preferred
- 1 tablespoon olive oil
- 1 onion, chopped
- 16 ounces fresh baby spinach, stems removed (preferably organic)
- 4 ounces feta cheese, crumbled
Recipe Notes
- I love frozen organic rice packets that cook in four minutes in the microwave! They are a great time-saver and taste delicious. My personal favorite is from Trader Joe's.
- I don't add salt or black pepper to this dish until I taste it out of the oven. The feta provides a good bit of saltiness, but feel free to add more salt if desired.
- If you like spice, add some ground cayenne or crushed red pepper flakes.
Here's how to make it:
- Warm a skillet with the oil over medium heat for 1 to 2 minutes. Add the chopped onion and sauté for 3 to 4 minutes, or until onion is soft and clear.
- Add the spinach to the skillet and cook for 1 minute, or until it is wilted. Turn off stove.
- Remove skin from the salmon, if desired, and slice into fillets without going all the way through to the opposite side. Place on a parchment paper-lined baking sheet.
- Divide the spinach mixture and stuff it into the sliced salmon. Add large crumbles of feta to the spinach mixture, pushing a few pieces into the opening.
- Bake in a preheated 375-degree F oven for about 10 to 13 minutes, or until the fish reaches your desired doneness.
