Salmon dinners are so easy, healthy and delicious. If you want to start eating more salmon as part of a nutritious Mediterranean diet, then I've got a simple recipe to get you started. With just six ingredients and ready in about 20 minutes, this savory lemon and dill baked salmon recipe is a nutritiously delicious dinner that's very easy to make. It's a great high-protein addition to a healthy Mediterranean diet.
This wholesome baked salmon recipe features the health benefits of salmon, which is considered one of the most nutritious foods in the world; the health benefits of lemon, which is packed with vitamins and antioxidants; and the health benefits of dill, which is a key ingredient in the Mediterranean Diet. But what I love most about this salmon recipe is that it tastes amazing and is so quick to put together.
Here are the gluten-free ingredients needed to make this simple seafood dinner recipe: fresh salmon, extra virgin olive oil, fresh lemon juice, fresh dill, onion powder and garlic powder. You put the sauce ingredients together then spread it over the salmon. After about 15 minutes of baking, you're ready to serve it up.
This flavorful low-sodium salmon is great served with your favorite side dishes for a well-balanced dinner. I served it with a high-protein broccoli cheese casserole for a meal everyone enjoyed (in no time).
Cuisine: Mediterranean
Prep Time: 5 minutes
Cook Time: 12 to 15 minutes (ovens vary)
Total Time: 17 to 20 minutes
Servings: 3
Ingredients
- 1 pound fresh salmon filet
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- 2 tablespoons fresh dill
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
Recipe Notes
- I like to squeeze my own fresh lemon juice, but you can use bottled lemon juice in a pinch.
- You can add more fresh dill as an optional garnish, if desired.
- Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.
Here's how to make it:
- Place the salmon filet, skin side down, in a casserole dish or baking pan (I lined mine with aluminum foil for easier cleanup). In a small mixing bowl or measuring cup, add the olive oil, lemon juice, dill, garlic powder and onion powder. Stir to blend. Spread the mixture over the salmon. Season with sea salt and black pepper, to taste, if desired.
- Bake the salmon at 400 degrees F for about 12 to 15 minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer.
- Remove from oven and serve with your favorite vegetables or side dishes.
