This easy budget-friendly rotisserie chicken broth recipe can be eaten as is or used in any recipe calling for chicken broth. To make this rich and comforting gluten-free homemade chicken broth you will need leftovers from your rotisserie chicken (bones, wings and skin), carrots, celery, onion and garlic.

Ingredients
- leftover rotisserie chicken bones, wings and skin
- 2 carrots
- 1 celery stalk
- 1 small onion, peeled
- 2 garlic cloves, peeled
Here's how to make it:
- Add the leftover rotisserie chicken to a stock pot with the carrots, celery, onion and garlic cloves. (You can add fresh herbs to the stock while simmering to add extra flavor.)
- Pour in enough water to cover.
- Bring the broth to a boil and then simmer for at least 2 hours.
- Strain the liquid in the pot for a chicken broth ready to add into any soup recipes. Store the broth in airtight containers or mason jars in the fridge. You can also freeze the broth to use later.
